Tukiwa katika countdown ya siku hadi Mwezi mtukufu wa Ramadhan, matayarisho kabambe tayari yashaanza kufanywa hasa pande zetu za uswahilini. Mapishi huwa ni sehemu muhimu katika jamii zetu. Huku pwani, mapishi ni kivutio kikubwa. Malindians tukishirikiana na Mapishi mix tutakuwa tukiwaletea resipe (Recipes) ya vyakula tofauti tofauti.

Leo hii tunawaletea recipe ya kuandaa maandazi ya nazi. Maandazi huwa katika picha ya wengi inapokuja chakula cha asubuhi.

Vipimo


Maji ½ kikombe

Hamira vijiko 2 1/4 chai

Tui la nazi zito kikombe 1

Ute wa mayai 2

Sukari ½ kikimbe

Chumvi kijiko 1 chai

Unga wa ngano vikombe 3½ – 4

Nazi ilokunwa ¼ kikombe

Hiliki ilotwangwa kijiko 1 chai

Kungu manga ilokunwa kijiko 1 chai

Sukari ya unga kwa ajili ya kunyunyiza juu(ukipenda)

Mafuta ya kukaangia

 

MAELEKEZO:


1. Tia Maji katika sufuria jikoni acha yapate moto, kisha mimina katika bakuli kubwa yakiwa moto, tia tui la nazi, chumv na sukari koroga vizuri kisha tia hamira koroga tena acha ifure kwa muda wa dk 5.

2. Tia ute wa mayai koroga vizuri , kisha tia vikombe 3 1/2 unga, hiriki,kungu manga na nazi ya kukuna kisha endelea kuchanganya kwa mkono au mashine hadi ufanye donge.

3. Kanda unga wako hadi uwe laini na wakuvutika, ongeza unga kidogo kama utakuwa wakunata hakikisha hauzidishi unga ukawa mkavu sana.

4. Tia unga wako katika bakuli ulopaka mafuta ,funikia kwa plastic au kitambaa kisafi kisha acha ufure hadi ujae mara mbili.

5. Sukuma unga wako kufanya chapati pembe nne yanye unene kama inch 1 kisha kata maandazi yako kama picha inavyoonyesha ,unaweza pia kata kwa style yoyote upendayo.

6. Mimina mafuta katika sufuria yako, tia jikoni katika moto wa kiasi yapate moto.

7. Kaanga maandazi yako hadi yapate rangi ya brown pande zote mbili. Epua acha yachuje mafuta katika paper towel au wire rack. Rudia kumaliza yote.

8. Nyunyiza sukari ya unga ukipenda, Kula maandazi yako kwa kikombe cha kahawa pembeni. Enjoy!

 

For our English readers, here is the recipe:

Ingredients:

½ cup warm water
2 teaspoon yeast
1 cup thick coconut milk
2 egg whites
½ cup sugar
1 teaspoon salt
3½ – 4 cups all purpose flour
¼ cup grated coconut
1 teaspoon ground cardamom spice
1 teaspoon grated nutmeg
Powdered sugar to sprinkle
Vegetable oil for deep frying

Instructions

1. Add water in a sause pan,bring to a boil over medium then pour into a large bowl add thick coconut milk, salt and sugar stit well the add yeast and stir again, let activate for 5 minutes.

2. Add in egg whites and stir then add 3 ½ cups flour, cardamom, nutmeg, grated coconut and continue mixing by hands or in a stand mixer until a dough form

3. Knead the dough until smooth and elastic add a little more flour of it is too sticky don't add to much so it ends up too dry.

4. Transfer to a greased bowl, cover with a plastic wrap or clean kitchen towel and let rise until double in size

5. Roll out dough into a 1 inch thick rectangle,cut in bite size as shown in pic.

6. Pour oil in a large pan let heat over medium heat.

7. Fry ur mini maandazi until golden brown on both sides. Remove from heat and let drain on a paper towel. Repeat to finish all.

8. Dust with powdered sugar if desired. Enjoy with a cup of coffee.
